Created by experimental French chef Paul Pairet, critically acclaimed Ultraviolet by Paul Pairet is a one-of-a-kind, multi-sensory dining experience, that takes the diner on a journey through 20 courses.

Featuring a single, communal table of just 10 seats in a seemingly nondescript dining room, diners are shuttled off to a secret location before unfolding through an ‘Avant-Garde’ set menu coupled with state-of-the-art technology choreographed by Pairet and his team.

The room transforms with lights, sounds, music, scents, and of course, food, enhancing each course with its own ‘taste-tailored’ atmosphere to engage the senses and trigger emotion, ultimately stimulating and influencing what Pairet calls ‘Psycho-taste’ – our personal perception of taste, and his belief that food is about emotion, which goes beyond taste.

Pairet conceived the idea in 1996, yet it took 15 years to develop, with the restaurant opening in 2012 and winning a stream of awards and accolades ever since, including two Michelin stars last year.
