This isn’t your grandmother’s taco. This isn’t a taco at all, in fact – this is a tako, a rather curious local dish you’ll find at select destinations on the island of Sumatra, Indonesia. The tako, found at guest houses from Lake Maninjau to Lake Toba, is a baked pastry with a savoury centre filled with ground beef, grilled vegetables, eggs, and local spices. The tako has the air of a dish created by locals upon hearing what visitors like at home – and apparently visitors like light, airy pastry, a succulent centre, and heady Indonesian spice and fish sauce on the side.
