Celebrated as one of the finest and most innovative talents in Singapore gastronomy, renowned chef and restaurateur Emmanuel Stroobant has created an Essence-Centric cuisine, in which innovative, often painstaking, techniques are used to extract the essences of natural ingredients to form the base, stocks, and seasonings that flavour the dishes.

Four- to eight-course degustation menus showcase seasonal artisanal produce and spices of the region, and live fish is used whenever possible, for a result that is balanced, fresh, and flavoursome without the heavier richness of typical French food.
