Sleepy Anguilla comes to life on the weekends, with a number of pop-ups and food trucks serving those coming and going. Many stalls open at the People’s Market – a great place to buy fresh produce –near the school library. Pigtail soup, goat water, roti, jerk chicken and other island delicacies are fired up on oil drum grills. Look for Hungry’s, a food truck that parks near the Post Office on weekends. The Corn Soup Lady pops up at the Ronald Webster parking centre on Saturdays, doling out the island’s favorite soup from two giant cauldrons; if you miss out on the soup, Mabel Gumbs and her crew also grill chicken and offer sweet potato pudding. The Roti Hut at George Hill cooks up some fat, juicy rolls all weekend long.
