Culinary excellence coming to Raffles Singapore

Landmark Singapore hotel Raffles Singapore, which first opened in 1887, is in the final phases of a complete restoration, with a re-opening scheduled for August 2019. The hotel will introduce new dining concept partnerships with highly renowned chefs Alain Ducasse, Anne-Sophie Pic and Jereme Leung.

The new restaurants will include BBR by Alain Ducasse, La Dame de Pic by Anne-Sophie Pic and 兿 yìby Jereme Leung. Bar & Billiard Room (BBR) is the first Mediterranean sharing and grill concept for Alain Ducasse anywhere in the world. With the new concept, the 122-year-old restaurant, which started as a club during British colonial rule, will continue to be a social gathering space for travellers and locals.

La Dame de Pic will be an entry into the Asian market for Anne-Sophie Pic, one of the world’s top female chefs and a third-generation Michelin starred chef following her grandfather and father – with herself awarded three Michelin stars.

兿 yì by Jereme Leung is headed by one of the most influential chefs in the modern Chinese culinary movement, with MasterChef Jereme Leung returning home to Singapore where he spent his formative years. His contemporary Chinese restaurant will be located on Level 3 at the newly restored Raffles Arcade.  

The Long Bar, home of the famous Singapore Sling, has already reopened, with refreshed plantation-inspired décor and the famous bar counter restored. In keeping with tradition, guests can still take their peanuts direct from the gunny sack and drop their shells on the floor.
