As the weather heats up, the days get longer and the festive season approaches, we’re all looking for a refreshing cocktail to become our new drink of choice. And aquafaba is your new best friend. To make it, you just straight the juice out of a can of chickpeas and voila, you have the perfect egg white substitute to create frothy cocktails.

Mojito

Ingredients

  • 50ml Bacardi Carta Blanca rum
  • 25ml lime juice
  • 12 mint leaves
  • 2 tsp extra fine sugar
  • 25ml soda water
  • 1 sprig of fresh mint

Method

Take the lime wedges and squeeze them into the glass. Gently press together the limes and sugar. Add mint to glass, and press with a bar spoon to release oil. Half-fill the glass with crushed ice, add the Bacardi Carta Blanca rum and mix. Top with crushed ice and soda. Garnish with a mint sprig.

Passionfruit Sour

Ingredients

  • 60ml Grey Goose Vodka
  • 30 ml Passoã passionfruit liqeur
  • 30ml passion fruit pulp
  • 30ml freshly squeezed lime juice
  • 10ml aquafaba or egg white
  • 10 ml sugar syrup

Method

Add Grey Goose Vodka, Passoã, passion fruit pulp, lime juice, aquafaba and sugar syrup to a shaker.

Shake for at least 30 seconds then add ice, shake again and strain into a martini cocktail glass. Garnish with a half passionfruit.

French 75 Cocktail

Ingredients

  • 35ml Bombay Sapphire Premier Cru Murcian Lemon
  • 75ml Brut Champagne
  • 15ml freshly squeezed lemon juice
  • 1½ tsp white sugar
  • 1 lemon peel twist

Method

Add fresh lemon and sugar to a shaker and stir to dissolve. Add Bombay Sapphire Premier Cru and fill with cubed ice. Shake well and then strain into your champagne flute. Top with chilled Brut Champagne. Stir slowly, garnish with a lemon peel twist

French 75 summer cocktail

Piña Colada

Ingredients

  • 50ml Bacardi Coconut
  • 35ml coconut water
  • 25ml pineapple juice
  • 4 pineapple chunks
  • 2 tsp sugar

Method

Gently crush 3-4 pineapple chunks in a shaker. Add the pineapple juice, coconut water and sugar, then stir. Add the Bacardi Coconut and ice, and shake vigorously. Serve in a hurricane glass over crushed ice.

Patron El Cielo Spritz

Ingredients

  • 30ml Patrón El Cielo
  • 30ml chilled Pinot Grigio or Provençale rosé wine
  • 300ml chilled Fever Tree ginger ale
  • Orange slice for garnish

Method

In a white wine glass with cubed ice, build all ingredients and stir to combine. Garnish with a fresh orange wedge by squeezing then dropping into the glass.
